- Mizuna · 40 days · 0.2–0.5 lbs/plant — Feathery Japanese mustard — cut-and-come-again; baby leaves in ~3 weeks.
- Tatsoi · 45 days · 0.3–0.6 lbs/plant — Flat rosettes of spoon-shaped leaves — the cold-hardiest of the bunch.
- Pak Choy · 50 days · 0.8–1.5 lbs/plant — Bok choy — thick juicy stalks. Prize Choy is a classic variety.
- Napa · 70 days · 2–4 lbs/plant — Heading Chinese cabbage (Pekin pai tsai) — steady water or it bolts.
